Executive Chef, Benny Gray

Born in Jennings, Louisiana, in 1977, Chef Benny Gray began his culinary career at 19 with Ensco Offshore, starting as a galley hand in 1996. Within six months, he was promoted to night cook, and by 1998, he became a sous chef, honing his skills in fruit carving, cake decorating, ice sculpting, and more through various culinary programs.
Kitchen Manager, Shannon

Kitchen Manager, Shannon

Shannon Smith began her culinary journey in 2021 at Coushatta Casino in Louisiana, gaining hands-on experience as a line cook at The Terrace Café and Big Sky Steakhouse. In 2022, she moved to the Golden Nugget, refining her skills in fast-paced, high-volume kitchens, including Saltgrass Steak House.
